The 2007 Reserva shows far greater pedigree than the 2006. The blend is approximately the same with an additional two months in American oak. It exhibits greater intensity on the nose with elegant red fruit, mingling with lavender and terracotta aromas. It is well-defined and speaks of its place. The palate is medium-bodied with a fleshy, well-defined entry. Crisp red fruit, sage and a touch of orange rind vie for attention, while the oak is succinctly well-integrated.
The cocoa-tinged finish is both satisfying and long.

Inky ruby. Seductively aromatic nose offers ripe red and dark berries, smoky minerals, aged beef, baking spices and flowers. Sweet black raspberry and cassis flavours are firmed by youthfully bitter tannins and complicated by floral pastille, vanilla bean and sweet chewing tobacco qualities. This is already showing some complexity, so it wouldn't be criminal to drink it now, but I'd leave mine alone for at least another six years.

    DOMINO de PINGUS
A top Ribera del Duero estate who use Organic Methods in all the wine making. Their top wine "Pingus" is very sought and sells at £300 per bottle!
Their 2nd wine  "Flor de Pingus" is also of great quality, and represents great value compared to the top wine.

Peter Sisseck, a Dane trained in Bordeaux, was dispatched to Ribera del Duero, Spain, in 1990.
From the start, Sisseck aimed to produce top quality wines in small quantities. He consequently sought out particular terroir and parcels of ancient vines. Pingus was the first wine he produced independently and it was a triumph.
It soared to worldwide acclaim, as did Peter’s reputation as a truly gifted winemaker.
Flor de Pingus then followed.

Pingus is fully biodynamic and Flor is moving in that direction.
PSI Pingus is a new innovative project; 2007 being the first vintage.

The palate is very well defined and the tannins, a little finer and more filigree than the 2009. It is fresh and natural, with precise dark berry and balsamic notes towards the finish. Thankfully the 2010 maintains its natural, almost -laid-back- persona and it represents the best PSI to date.

The 2009 PSI is much more precocious on the nose compared to the 2008, a real step up in quality. It offers fresh strawberry, raspberry and a touch of cranberry, all infused with exotic notes of mango and orange essence. It blossoms beautifully in the glass. The palate is medium-bodied with powdery tannins on the entry. There are subtle notes of blackberry, tobacco, tart cherry and pain grille that combine harmoniously on the understated, natural finish. This is drinking well now, but should age nicely over several years.

In the wonderful 2004 vintage, owner/winemaker Peter Sisseck has outdone himself.
If I were just starting to build a wine collection and had limited income, I can think of no better foundation than a dozen bottles of 2004 Flor de Pingus.
In the context of the world’s great wines, it is a stupendous value, a steal. It is 100% Tempranillo from very low yields and is aged 14 months in 100% new French barriques. Opaque purple in colour, it emits already complex aromas of smoke, toast, coffee, blueberry, blackberry, and liquorice. Lush on the palate, super ripe and sweet, as well as multi-dimensional, this great effort can be drunk now, but I’d opt for cellaring it for 6-8 years to allow further evolution.
