    DOMAINE
WILLIAM FEVRE
Since having been taken over in 1998 by Bouchard Pére & Fils, the quality of these wines has really improved.
This estate now produces some of the best Chablis; classical mineral/steely and fruit driven wines.

Please note: All wines listed are Domaine Wines and not from the negociant side of the business (unless indicated otherwise).

35 75cl Chablis
'Bougros Cotes
de Bouguerots'
Grand Cru
W. Fevre

AM -
As it always is, this is more elegant and refined than the regular cuvée of Bougros with high-toned citrus, stone and sea breeze aromas dissolving into powerful, focused and pure flavours that are precise and wonderfully intense plus offering the same impressive level of dry extract and an almost aggressively mineral and hugely long finish. I have always very much liked the character of this wine as it manages to pull off blending raw power with elegance and not losing either element in the bargain.

27 75cl Chablis
'Les Clos'
Grand Cru
W. Fevre

AM -
An airy, expressive and ultra refined and pure nose of white flower, quinine, saline, minerals and seashore nuances trimmed in discrete wood gives way to rich and robust, indeed huge flavours that are perhaps a bit less refined than those of the Valmur or Preuses but there is another dimension here of depth that more than compensates. A great wine with a long future that should develop slowly yet because of all the mid-palate fat, be enjoyable young.

11 75cl Chablis
'Les Clos'
Grand Cru
W. Fevre

AM -
In contrast to the relative expressiveness of most of this group, the Les Clos is backward, reserved and very tight, revealing only glimpses of white flower, oyster shell and an airy marine influence that can also be found on the intense, pure and astonishingly precise flavours that possess another dimension relative to all of the other '05s. Class in a glass as they say and while presently tighter than a drum, this has the material and balance to age for years.

16 75cl Chablis
'Les Clos'
Grand Cru
W. Fevre

AM -
Stylistically, this closely resembles the Valmur with its ultra elegant and pure aromas featuring white flowers, oyster shell and subtle spice notes that perfectly complement the round, powerful, rich and full-bodied flavours that coating the mouth and culminate in a saliva-inducing, incredibly intense finish that reminded me more than a little of a great Corton-Charlemagne. This just oozes minerality and the texture is minerally to the point of this resembling a block of stone. A great Les Clos.

7 75cl Chablis
'Les Clos'
Grand Cru
W. Fevre

AM -
As was the 2001, this is somewhat oakier than the other grands crus and this will appeal more to those who enjoy more than a trace of wood in their Chablis. This is a huge wine, indeed even massive and this could easily be mistaken for a fine Chevalier. At the moment, this lacks the same finesse and precision as I find that the wood blurs somewhat the delineation that the best of this range deliver. To be sure, this is a very fine effort but I would prefer a bit less oak influence as it rounds off the flavours and slightly mutes the minerality; that said, the impressive sap, acid balance and sheer depth of material should permit this to enjoy a very long life.

11 75cl Chablis
'Grenouilles'
Grand Cru
W. Fevre

AM -
Tighter, purer and completely different as this is presently displaying brioche and yeast aromas framed by a hint of pain grillé leading to deep, ripe, incredibly rich and powerful flavours that simply offer another dimension compared to the premiers crus. Impressively long, sappy and there is that indefinable element of class here plus a notably dry finish.
A terrific effort.

TOP VINTAGE!

8 75cl Chablis
'Les Preuses'
Grand Cru
W. Fevre

AM -
This is the second year running where the Preuses really distinguishes itself with an incredibly complex nose of brioche, spice, green fruit, shell fish, algae and sea breeze notes that merge into wonderfully elegant yet generous, full, forward and strikingly classy flavours that are dense, balanced and unbelievably persistent plus they display more minerality than usual. The acid spine is firm and ripe but not aggressive and should easily see this through at least a decade of cellar time. I normally have a real weakness for the Valmur at this address but the Preuses is really something in 2005.

75cl Chablis
'Les Preuses'
Grand Cru
W. Fevre

AM -
As I suggested in my in-barrel review, this had the potential to be a first rate stunner of a wine and it has indeed come together. In fact, I see no need to modify the original note, which I repeat here other than to point out that as good as the Valmur and Vaudésir, there is another dimension present here. Green fruit and citrus aromas with a subtle trace of quinine serve to highlight round, sweet and powerful flavours that possess enormous depth of material and the vibrancy of the finish is flat out unbelievable. In a sense, this is a deceptive wine in that no more than the finish appears to be winding down then it picks up again. At present, this is the longest and most persistent wine in the range and while this aspect is subject to change with time, it is a dazzling effort that vies credibly for top honours. I could still taste this wine the next day!

60 75cl Chablis
'Valmur'
Grand Cru
W. Fevre

AM -
Here the beautifully expressive nose is even more elegant but as Valmur almost always is, the aromas are restrained, cool, refined and practically shout "Chablis" as the saline and oyster shell notes add real depth to the classic green fruit and floral aromas. As the low yields would suggest, this is one concentrated wine with an opulent mouth feel yet no loss of detail on the iodine-infused and austere finish that seems to go on and on. Terrific and by the standards of this wine.

35 75cl Chablis
'Vaudesir'
Grand Cru
W. Fevre

AM -
Perhaps the freshest of any of these grand crus to this point, which is interesting as Vaudésir tends to always be one of the very ripest of the GCs given how the configuration of the vineyards collects heat. While the nose is certainly ripe, it is also airy and elegant with floral, spice and orchard fruit aromas complementing the quinine and citrus notes that can also be found on the powerful, muscular and borderline robust flavours that somehow manage to remain refined and deliver the considerable dry extract with grace on the explosive finish. This is generous on the mid-palate but it's almost breathtaking as to how fast the finish tightens up. Impressive.

10 75cl Chablis
'Vaudesir'
Grand Cru
W. Fevre

AM -
A trace of wood spice frames ultra rich and extremely ripe aromas that are very fruit-forward followed by juicy, even succulent, borderline fat flavours that manage to maintain incredible focus and this just oozes minerality on the superbly long finish. It's fascinating to see a wine that is this ripe deliver such detail and minerality, all wrapped in solid acidity. A flat out terrific effort that delivers even bigger and more powerful flavours than the Vaulorent if not necessarily more detail and finesse.

TOP VINTAGE!

10 75cl Chablis
'Fourchaumes Vignoble de Vaulorent'
1er Cru
W. Fevre

AM -
Airy, perfumed and gorgeously nuanced lemon, oyster shell and green fruit aromas give way to reveal full-bodied, thick and powerful, even driving flavours culminating in a finish that explodes like a bomb in the mouth. The balance is impeccable and the intensity is easily of grand cru calibre.
This is absolutely a wine to buy.

4 75cl Chablis
'Fourchaumes Vignoble de Vaulorent'
1er Cru
W. Fevre

AM -
Another big step up in elegance and purity as the wonderfully expressive and beautifully complex nose offers outstanding detail in the tight green apple fruit aromas cut with obvious minerality and a touch of citrus followed by rich, full and concentrated flavours of uncommon depth and superb finishing intensity; indeed this is almost painfully intense. A terrific effort that delivers grand cru size and weight and this is a real stunner of a wine and highly recommended.

This too evidences strong mineral notes yet this is a bigger, more powerful wine with more concentrated flavours that simply ooze extract. Extremely intense yet quite fine and this displays grand cru muscle and positively stains the palate.
A great effort.

58 75cl Chablis
'Les Lys'
1er Cru
W. Fevre

AM -
Here too the nose is largely dominated by wonderfully pure and intense floral notes but as is typical of the vineyard, there are also subtle spice hints that lead to textured flavours that possess a seductive mouth feel, ultimately culminating in a mineral, refined and linear finish. I very much like the underlying sense of tension here and while there is not quite as much depth as exhibited by the Montmains, it's close.

36 75cl Chablis
'Montée de Tonnerre'
1er Cru
W. Fevre

AM -
An unmistakable step up on almost every dimension as this is more elegant, more refined, more sophisticated and more complex, particularly on the airy white flower fruit and menthol nose that introduces powerful, concentrated and gorgeously intense flavours that feature an explosively long finish. This has real energy to it plus grand cru calibre class.

NOTE: This is a non-domaine wine: i.e. grapes are bought-in, although the vinivication process is done fully under control of the Fevre domaine.

10 75cl Chablis
'Montmains'
1er Cru
W. Fevre

AM -
An airy and intensely floral nose nuanced by hints of salt water and iodine is much more elegant than that of the Beauroy and merges into the balanced, precise and detailed middle weight flavours, all wrapped in a long finish replete with plenty of oyster shell character.
This is a lovely wine in every respect plus it will age.

36 75cl Chablis
'Vaillons'
1er Cru
W. Fevre

AM -
An overtly spicy nose that is a mix of floral, green fruit and sea breeze merges into big, rich and intense flavours, there is admirable concentration and dry extract.
This is round and attractive but less persistent than the best of these 1ers.
