DOMAINE
WILLIAM FEVRE
Since having
been taken over in 1998 by Bouchard Pére & Fils, the quality of these wines has really
improved.
This estate now produces some of the best Chablis; classical
mineral/steely and fruit driven wines.
Please note: All
wines listed are Domaine Wines and not from the negociant side of
the business (unless indicated otherwise). |

Bright lemon-yellow colour.
Fresh nose combines peach, spice, menthol and hazelnut, along with a
suggestion of dried fruits. Fat, round and quite dry, with the exotic
hint carrying through in the mouth. But this fresh, juicy Chablis
possesses excellent richness of fruit for its appellation. |

Bougros Cotes
de Bouguerots
Grand Cru
AM -
As it always is, this is
more elegant and refined than the regular cuvée of Bougros with
high-toned citrus, stone and sea breeze aromas dissolving into powerful,
focused and pure flavours that are precise and wonderfully intense plus
offering the same impressive level of dry extract and an almost
aggressively mineral and hugely long finish. I have always very much
liked the character of this wine as it manages to pull off blending raw
power with elegance and not losing either element in the bargain. |

A deft touch of pain
grillé showcases more elegant and more refined green fruit and shell

This is another step up in
power and weight with a subtle hint of wood spice enveloping a
wonderfully complex nose of minerals, white flowers and a hint of
crushed oyster shells but otherwise, this is a bulldozer of a wine as
it's muscular, powerful, deep and broad and blessed with simply
unbelievable length and vibrancy. All I could do after tasting this was
to shake my head in awe as it struck me as a hypothetical blend of
Bâtard-like power and Chablis-like precision all wrapped in an explosive
finish. A great effort. |

Chablis Les Clos

An airy, expressive and
ultra refined and pure nose of white flower, quinine, saline, minerals
and seashore nuances trimmed in discrete wood gives way to rich and
robust, indeed huge flavours that are perhaps a bit less refined than
those of the Valmur or Preuses but there is another dimension here of
depth that more than compensates. A great wine with a long future that
should develop slowly yet because of all the mid-palate fat, be
enjoyable young. |

In contrast to the relative
expressiveness of most of this group, the Les Clos is backward, reserved
and very tight, revealing only glimpses of white flower, oyster shell
and an airy marine influence that can also be found on the intense, pure
and astonishingly precise flavours that possess another dimension
relative to all of the other '05s. Class in a glass as they say and
while presently tighter than a drum, this has the material and balance
to age for years. |

Stylistically, this closely
resembles the Valmur with its ultra elegant and pure aromas featuring
white flowers, oyster shell and subtle spice notes that perfectly
complement the round, powerful, rich and full-bodied flavours that
coating the mouth and culminate in a saliva-inducing, incredibly intense

minerally to the point of this resembling a block of stone. A great Les

Chablis Les Clos

AM -
As terrific as the Côte de
Bouguerots is, this raises the bar in terms of elegance and this is one
of the most elegant young Chablis that I have ever had the privilege of
trying as the purity of expression here is almost beyond belief.
Stunningly focused and detailed and this wine has it all with power,
muscle, sap, style, complexity, typicity, concentration, depth and a
palpable sense of minerality as the flavours seem as though they're cut
from liquid stone. The finish left me dumbfounded as I didn't think it
was possible for this to be longer than the Bouguerots. A great, great
Les Clos that is worth a special search to find. |

It was frankly hard to
believe that the '01 Les Clos could match the Preuses' elegance but
indeed it does as this is big, expressive, wonderfully stylish and

Chablis Les Clos
Grand Cru
AM -
As was the 2001, this is
somewhat oakier than the other grands crus and this will appeal
more to those who enjoy more than a trace of wood in their Chablis. This
is a huge wine, indeed even massive and this could easily be mistaken
for a fine Chevalier. At the moment, this lacks the same finesse and
precision as I find that the wood blurs somewhat the delineation that
the best of this range deliver. To be sure, this is a very fine effort
but I would prefer a bit less oak influence as it rounds off the
flavours and slightly mutes the minerality; that said, the impressive
sap, acid balance and sheer depth of material should permit this to
enjoy a very long life. |

This is the second year
running where the Preuses really distinguishes itself with an incredibly
complex nose of brioche, spice, green fruit, shell fish, algae and sea
breeze notes that merge into wonderfully elegant yet generous, full,
forward and strikingly classy flavours that are dense, balanced and
unbelievably persistent plus they display more minerality than usual.
The acid spine is firm and ripe but not aggressive and should easily see
this through at least a decade of cellar time. I normally have a real
weakness for the Valmur at this address but the Preuses is really
something in 2005. |

Chablis Les Preuses
Grand Cru
AM -
As I suggested in my
in-barrel review, this had the potential to be a first rate stunner of a
wine and it has indeed come together. In fact, I see no need to modify
the original note, which I repeat here other than to point out that as
good as the Valmur and Vaudésir, there is another dimension present
here. Green fruit and citrus aromas with a subtle trace of quinine serve
to highlight round, sweet and powerful flavours that possess enormous
depth of material and the vibrancy of the finish is flat out
unbelievable. In a sense, this is a deceptive wine in that no more than
the finish appears to be winding down then it picks up again. At
present, this is the longest and most persistent wine in the range and
while this aspect is subject to change with time, it is a dazzling
effort that vies credibly for top honours. I could still taste this wine
the next day! |

Extremely subtle smoke and
wood spice blend with classic Chablis green apple and crushed oyster
shell aromas that precede gorgeously complex, ripe, painfully intense
flavours that are less angular than the Bouguerots. This doesn't have
the same power but it's actually a more complete and harmonious wine, at
least at this point with top flight elegance and an unmistakably sense

Chablis Valmur
Grand Cru

Here the beautifully
expressive nose is even more elegant but as Valmur almost always is, the
aromas are restrained, cool, refined and practically shout "Chablis" as
the saline and oyster shell notes add real depth to the classic green
fruit and floral aromas. As the low yields would suggest, this is one
concentrated wine with an opulent mouth feel yet no loss of detail on
the iodine-infused and austere finish that seems to go on and on.

Chablis Valmur
Grand Cru
AM -
As one might expect, this is
not only more elegant but it's the most elegant wine in the entire
line-up, closely challenged only by the Les Clos. The perfumed,
high-toned and classically styled nose features subtle spice, floral,
reserved green fruit cut with oyster shell and iodine notes plus that
unmistakable sea salt nuance that says "Chablis!" leads to textured and
superbly defined, refined and focused flavours that are crystalline in
character, all wrapped in an explosively long finish that is like
rolling pebbles around in the mouth. While there are several wines in
this range that may rival the Valmur qualitatively, this is a one
seriously stunning wine and in particular, the transparency and harmony
of expression are worth the price of admission alone.

Chablis Vaudesir
Grand Cru
AM -
Perhaps the freshest of any
of these grand crus to this point, which is interesting as
Vaudésir tends to always be one of the very ripest of the GCs given how
the configuration of the vineyards collects heat. While the nose is
certainly ripe, it is also airy and elegant with floral, spice and
orchard fruit aromas complementing the quinine and citrus notes that can
also be found on the powerful, muscular and borderline robust flavours
that somehow manage to remain refined and deliver the considerable dry
extract with grace on the explosive finish. This is generous on the
mid-palate but it's almost breathtaking as to how fast the finish
tightens up. Impressive. |

This is aromatically quite a
bit riper with peach, pear and subtle exotic notes yet this remains
extremely fresh while introducing spicy, rich and full flavours that
display a bit of pain grillé and vanilla on the big, powerful and
punchy finish that goes on and on seemingly without end. This possesses
lots of personality and while the Valmur, for all its purity and grace
makes for an understated effort, the Vaudésir is far more expressive,
indeed showier though by no means vulgar or common. A completely
different expression from the Les Clos and Valmur and in short, this is
a real stunner of a wine. |
